Because microgreens are so dense in nutrition, some joke that they
should be referred to as macrogreens .Results from The University of Maryland College of Agriculture and Natural Resources with the United States Department of Agriculture revealed in 2012, that microgreens contain 4-40 times more nutrients than the standard vegetable of the same variety. The results surprised the team so much that they repeated the study several times, each with the same result. Some of the nutrients tested for were vitamin C, E, K, and beta carotene. Microgreens are bursting with antioxidants, vitamins, and minerals.
Description
Microgreens are young versions of full-sized vegetables, herb, and flowers. Consisting of a single stem, and at least two leaves called cotyledons. Typically, two very small true leaves can be observed at the center of cotyledons. They are harvested early in growing stage, just when the true leaf starts to develop. Usually harvested between 9-30 days, 1-3 inches in height, depending on variety.
